2.39 Searching for Vitamin C

“Searching for Vitamin C” is Lesson 39 (Food Science unit) of the Grow Your PALS Program Guide, a large-group mentoring lesson. Students learn the meaning of an “indicator” and create a water-cornstarch-iodine indicator solution to test and rank fruit juice samples by their vitamin C content, then chart their results.

  • thermometer
  • cornstarch
  • 1 tablespoon measure
  • water
  • science lab beaker (with 250 milliliter and 75 milliliter markings or kitchen liquid measuring cup(s) with metric markings)
  • container and Bunsen burner (or small pan and stove)
  • small pan or bowl
  • eyedropper
  • 2 percent iodine solution (available at a pharmacy)
  • 5 (¼-cup) samples of fruit juices and drinks to be tested (Quantity can change if you use fewer juices.)
  • 15-milliliter test tubes (5 of them and a rack or 5 small, equal-sized glass containers)
