USDA Food Safety Inspection Manual

The Processing Inspectors’ Calculations Handbook (Revised 1995), published by USDA’s Food Safety and Inspection Service, is a reference manual for meat and poultry inspection personnel and establishment staff. It compiles standardized calculation methods for verifying compliance with regulatory limits on restricted ingredients (curing agents, cure accelerators, phosphates, binders/extenders, flavorings, antioxidants), as well as meat/poultry component requirements, added-solution and labeling calculations, pump/pick-up/gain, shrinkage, yield, and miscellaneous formulations. Each chapter typically includes an introduction, formulas, and step-by-step procedure tables with worked examples.
