Lesson 1 HACCP – Student Activity Sheet

This is a student worksheet packet on HACCP (Hazard Analysis Critical Control Points) for food safety in meat processing. It includes a HACCP introduction video question sheet, a team activity to create a HACCP plan (covering product/ingredients, process flow diagram, and hazard identification/preventive measures) for a selected meat product, a HACCP gallery walk reflection, and an exit ticket. Students learn the principles of HACCP and how to identify and control food production hazards.
